Delphi xe 7. Xcode 6.1
I have added xcode 7.1 simulator to xcode
I have applied the hotfix from here :

Connection refused. Platform Server version mismatch expecting version 6.1.2.36.

terminal shows Platform Assistant Server  Version 6.0.2.32

The connection was working fine (apart from the simulator firing up but the app closing down).

I presume I need to downgrade the pa server on the windows machine.

Where do I find it please?

Don't you mean you need to upgrade the PA Server on the Mac?
The new PAServer file should be in the Delphi XE 7.1 upgrade files.
